So my brownies are pretty famous among my friends and family. I’ve made them countless times for birthdays, trips, sleepovers, family gatherings, and even simply because I want to eat them. They’re kind of like “Lilly’s special”. So I thought, why not share the recipe here so that anyone can make and taste them!
Ingredients:
One 8x8 inch tray
55g of plain flour
225g of sugar
2 medium-sized eggs
3 tablespoons of cocoa powder
55g of butter or margarine
170g of cooking chocolate chopped into pea-sized pieces
½ teaspoon of baking powder (NOT soda)
Some icing or powdered sugar to put on top
Steps:
Preheat the oven to 190°C and line the tray with parchment paper
Heat the butter/ margarine in low heat until it’s partially melted, and set it aside.
Sift flour, cocoa powder, and baking soda into a bowl. This makes sure that there are no chunks of flour and that all the dry ingredients are mixed well. Set this bowl aside
In another bowl, mix sugar and butter using an electric or hand mixer. Make sure there are no large granules of sugar or chunks of unmelted butter.
Add the eggs, one by one, and mix well until small air bubbles form.
Sift ¼th of the dry ingredient into this bowl, mixing well(Do NOT use an electric mixer for this. Use a hand mixer or a spoon). Once they are mixed well, add 2/3 rd of the remaining and mix well again. Then add the rest of the dry ingredients and mix well again.
Add the chopped chocolates into the mixture and mix well.
Pour the batter into the cake tray and bake it for 30 minutes in 190°C heat.
Once they are baked, take them out of the oven and leave them for about 15 minutes before cutting them into pieces.
Add sifted icing of powdered sugar onto the pieces.

Notes:
You can reduce the amount of sugar if you want. I use 200g instead of 225. You can even use 180g.
If you want your brownies to have a more bitter taste you can use about 3 more tablespoons of cocoa powder instead of cooking chocolate. If you want, you can add more!
